Baking With Jess

Hello everyone, this is my first ever baking post!
I absolutely love baking and if I could I would bake everyday! hahaha

I wanted to bake some:

Mocha & Brandy Cream White Chocolate Cupcakes (stuffed with coffee cream)
I don't like coffee that much, but have wanted to put coffee in cupcakes for ages so I thought now was the perfect time and I thought that I would share with you my baking skills this recipe isn't my own it was created by a lovely girl called Rachel! I have added the brandy cream as this is to give it a christmassy kick please don't add the brandy cream if you don't like it, just ignore it where it says brandy cream or the word brandy.

(Please Note the recipe is not mine, it was created by a lovely girl called Rachel, I have only added brandy cream to give it a festive kick! rachel if you are reading this seriously join/ sign up for the Great British Bake Off!)


(btw pre warning these do have a very strong coffee taste but are amazing!!!)

Ingredients

For The Mocha Cupcakes

175g of self raising flour
200g of caster sugar
200g of unsalted butter
3 tbsp of fine coffee granules/espresso powder (+ 1 tsp)
2 medium eggs
2 tbsp of cocoa
1 tbsp of water

For The Coffee Cream Filling

150g of cream cheese (full fat)
3 tbsp icing sugar (sifted)
1 tbsp coffee granules/espresso powder
1 tbsp of water

For The Brandy Cream & White Chocolate Cream Cheese Frosting

250g of icing sugar (sifted)
115g of cream cheese
100g of white chocolate
50g of unsalted butter (note- has to be at room temperature)
150g of Brandy Cream
and cocoa to decorate at the end!

Now lets get down to the baking!

Line a 12 hole cupcake tray with cupcake liners
Preheat oven to 175°C

1. Firstly you want to make a very strong coffee (almost paste like) so Boil the kettle, then in a mug make your very strong coffee (almost paste-like) with the 3 tbsp of your fine coffee granules and 1 tbsp of water of the boiling water and then move it to one side.

2. In a medium bowl sift your flour, 1tsp of coffee and cocoa together, then put that to one side.

3. In a large bowl cream together the butter and sugar by hand (tip if you do it by hand use a wooden spoon not a metal one) or with an electric whisk, then whisk in the eggs (add them one at a time), then add the cooled coffee.

4. Pour in half the flour mixture to your butter/sugar mixture bowl and fold together slowly, when JUST combined, add the remaining half and repeat. the mix should look something like this:



5. Then fill your cupcake holders with your batter until they are 3/4 full (they will/should double in size when baking) and pop on the middle shelf of your preheated oven for about 18-20 minutes. You will know when you're gorgeous cupcakes are done when you can insert a skewer/knife in the middle and it comes out clean or they are slightly browned around the edges. Take them out of the oven and then leave them to cool in the tray and then turn out onto a wire rack to cool further.

Now it's time to move onto your coffee cream filling!

1. Using the already boiled water (please re-boil it if it has gone look warm), make your second tiny coffee with the coffee granules and water. Set aside (this should be to the next step when completely cold)

2. Pop your cream cheese in a medium bowl and whisk on high speed for a few minutes, then turn the whisk down to medium speed and beat in the cold coffee (note- if your not a real coffee lover add a little bit and then taste), followed (little by little) with the icing sugar. Mix until everything is evenly combined and pop into the fridge.

Now for The White Chocolate And Brandy-Cream, Cream Cheese Frosting
(god imagine try saying that when you are drunk)

1. Melt your white chocolate you can do this in a microwave (takes about 2-3mins, do keep checking it and stirring it as it could burn, if you chose to do that add the brandy cream in after all the chocolate has melted) or my preferred method is a in a bowl placed over a saucepan of boiling water put the brandy cream and chocolate in the bowl. This takes a little longer but it's easier to keep an eye on it so you can see if is burning or not. once all the contents are melted, move it to one side and leave it too cool.

2. In a large bowl beat together the cream cheese and butter (do not use and electric whisk use a wooden spoon). Add the cooled chocolate and brandy cream mix (and please make sure it is properly cooled otherwise this will curdle -yuk!!) and mix. finally add the icing sugar, little by little, and mix until everything is evenly combined and smooth. (top tip- if you wanted to you could just do a butter cream with the white chocolate just swap the cream cheese for sugar- *note* you always want double the icing sugar to the amount of butter, that is just basically the rule for any buttercream mix).

Side Note- If you like your frosting a little thicker/thickened, add more icing sugar, if you want to loosen it up a bit add a tsp or 2 of milk.

3. Then pop that in the fridge, when you are happy with it.

To Assemble The Cupcakes

1. Once the cupcakes are completely cool and only when they are completely, you sneaky little person who wants to ice them straight away I can see you! ;). make a small hole in the middle of each one. If you have and apple corer then that's a handy tool to use or you can just use a sharp knife like I did. You want the hole to be a little bit bigger then a pound coin in width and about half way down the cupcake depth-wise. with the piece you have cut out you can eat it! (I knew you would) continue to do this with all the other cupcakes.

2. Fill the hole with your coffee cream filling until they are level with the top of the cake.

3. Pop your desired amount of the brandy cream and white choco frosting on top of the cupcakes either with a spoon or if you are fancy, pipe it on. Then Dust with a little cocoa for decoration and add a little christmas themed sweet to finish it off just to make you feel more christmassy already.

NOW.....
after all that hard work you are DONE! so go and enjoy the festivities that await you and share your cupcakes with your friends and family! after all that you'll be in need of a bit of a caffeine boost to get all that washing up done! ;) hahaha.

quick note - I'm not saying that I'm anywhere near as good at baking as miss merry berry, but if I'm truthful these are flippin' good, even if I do say so myself
